Veggie Green Bean Soup – 100% Plant-Based

Feeling hungry and tired? Try this Veggie Green Bean Soup! Eating a bowl of vegetable soup as a snack between meals or as a starter to every meal is a great habit for weight control. This veggie soup is 100% plant-based, contains fewer calories and has the perfect “filling” effect.  The combination of different vegetables, herbs, oil, and quinoa provides vitamins, minerals, carbohydrates, fat, and protein that keep you full and energized!

Why try this Veggie Green Bean Soup?

The carrots, green beans, and quinoa are an excellent source for all nine essential amino acids that our body needs to sustain muscle, hair and skin vitality. The combination of components in this dish create the perfect balance to both help the body and to improve the ability to absorb nourishment giving your tissues, muscles, and organs the necessary nutritional components. This keeps the skin glowing, and you looking young and energized.

Good to know before you start:

Green Beans shouldn´t be consumed raw. It takes 10 minutes of cooking time to make green beans ready to eat. The stem ends of the green beans should be removed (approx. 1 cm from each end). For more information on how to prepare fresh green beans

For those who miss the “beefy taste” (optional)

Add the 100% meat-free, the plant-based burger from “The Beyond Burger.” This burger is based on pea protein and is a perfect alternative to ground meat. You can crush the burger with a spoon when it’s defrosted to get a ground texture. The red color is the juice of red beetroot. So don´t be confused, when you see the “blood” splashes.

  • 1 saucepan
  • 1 spill stopper lid cover (It’s best to use a spill lid in order to avoid spilling. You can get the spill stopper on Amazon).
  • 1 knife
  • 1 cutting board
  • 1 spoon


Fresh French Green Beans

1 lb

Fresh Onions (diced)

1 cup

Fresh Garlic (diced)

5 cloves


2 cups

The Beyond Burger

1 patty


3 tbsp

Fresh Carrots

2 cups

Himalayan Pink Salt

½  tsp

Black Pepper

1 tsp

Fresh Parsley (diced)

1 cup

Coconut Oil

3 tbsp

How to prepare:

  1. Wash and prepare the green beans (see the instruction above), cut into three pieces
  2. Dice onions, garlic
  3. Peel the carrots and cut into cubes
  4. Put 3 tbsp coconut oil in the saucepan and let it melt
  5. Add diced onions, garlic, and carrots to the pan and sauté for 2 minutes
  6. Add The Beyond Burger and stir for 2 minutes. (If you don´t have or don´t want to add this Burger, see step 8)
  7. Add water, pepper and salt, stir
  8. Add quinoa, cover the pan with spill stopper and steam for 5 minutes
  9. Add green beans
  10. Steam for app. 10 minutes, stir occasionally.
