Special Day Protein Salad

Why do we call this colorful dish Special Day Protein Salad? The colorfulness of this salad reminds me of the beauty and vibrant diversity of life. The salad’s components are a mood booster and packed with the protein and micronutrients that our body needs. The combination of four simple ingredients are not only vibrant but include delicious sour and sweet flavors as well! 

Why try this Special Day Protein Salad?

Eating this salad is more than a tasty and beautiful experience, it gives you the nourishment that your body needs. Sweet potatoes, rich in Vitamin A, are essential for cell protection in order to prevent premature aging. The parsley and kidney beans contain potassium, a mineral that supports our muscle and skin tissues. The kidney beans contain iron, which is an essential mineral for the production of red blood cells (hemoglobin). Sauerkraut is rich in the probiotics that support our immune system and our digestion. Sauerkraut is an important source of vitamin K and B for the vegan diet.  The combination of components in this dish create the perfect balance to both help the body and to improve the ability to absorb nourishment giving your tissues, muscles, and organs the necessary nutrients. These nutrients keep the skin glowing and you looking young.

Tools you need:

  • 1 saucepan
  • 1 spill stopper lid cover (it’s best to use a spill stopper to avoid spilling. You can get easily get a spill stopper on Amazon).
  • 1 can opener
  • 1 knife
  • 1 cutting board
  • 1 spoon

Ingredients:

Fresh sweet potato (big size)

1 potato

Sauerkraut

2 cups

Kidney Beans (caned)

1 can

Fresh parsley, diced

1 cup

Himalayan Pink Salt

½  Tsp

Black Pepper

1 Tsp

Native Olive Oil

4 tbsp

Preparation:

  1. Peel the sweet potato and cut it into 4 pieces. Place them in the saucepan, cover with 2 cups of water, and cook until tender (approximately for 15 min).
  2. While potatoes cook, wash and rinse canned kidney beans and place them in the bowl.
  3. Add the sauerkraut, undrained (without liquid), into the bowl with the kidney beans
  4. Chop parsley and add to kidney bean mix
  5. When the potatoes are ready, let them cool down under cold water, then slice them into cubes and add into the bowl
  6. Add salt, pepper, and olive oil. Mix and enjoy!
