Vegan Pumpkin Sin Carne 100-% Plant-Based

Are you looking for a recipe with a Mexican flare? This recipe, inspired by the traditional Mexican dish chile con carne, is 100-% plant-based.   Pumpkin sin Carne, which means Pumpkin without meat, is gluten-free, a good source of protein and iron, and is absolutely delicious! You can serve this tasty, savory dish with bread, wild rice, or simply eat it alone. This dish is my absolute favorite!

Why should you try Vegan Pumpkin Sin Carne?

Pumpkin sin Carne contains a healthy portion of kidney beans and pumpkin, which have positive effects on the metabolism and weight loss. The high fiber content will help you feel satisfied longer which helps control your weight by keeping you from eating too much. The combination of components in this dish create the perfect balance to help the body and improve the ability of the tissues, muscles, and organs absorb nourishment keeping your skin glowing and you looking young.

Good to know before you start:

The Hokkaido pumpkin is a perfect choice for this dish. The Hokkaido pumpkin skin can be eaten and shouldn´t be peeled. It takes 15 minutes to cook the Hokkaido pumpkin, so for this dish, you don´t need to precook the Hokkaido. Cut the pumpkin in half, remove the seeds from inside, and dice the remaining pumpkin into cubes (2x2cm). *If you can´t find a fresh Hokkaido pumpkin, you can buy it frozen, or replace it with 2.5 cups of diced sweet potato.

For the best taste try the 100% meat free, plant-based burger from “The Beyond Burger.” This burger is based on pea protein and is a perfect alternative to ground meat. You can crush the burger with a spoon when it’s defrosted to get the classic ground meat texture. The red color comes from the juice of red beetroot. So don´t be confused when you see the blood splashes.

If you prefer whole food vegan diet or if you can´t find “The Beyond Burger”, use ½ cup of dry quinoa instead.

 

Equipment:

  • 1 saucepan
  • 1 spill stopper lid cover
  • 1 can opener
  • 1 knife
  • 1 cutting board
  • 1 spoon

Ingredients:

Fresh Hokkaido pumpkin (medium size)*

1/2

Fresh Onions (diced)

2 cups

Fresh Garlic (diced)

5 cloves

Fresh Bell Pepper (diced)

1 cup

Fresh Chilly (depends on how spicy should the dish be.)

½ piece

Cooked or caned kidney beans

2,5 cups

Water

1 cup

The Beyond Burger

2 patties

Dried Marjoram

5 tbsp.

Cumin Powder

1 tsp

Paprika powder

2 tsp

Himalayan Pink Salt

1/2 Tsp

Black Pepper

1 Tsp

Tomato Sauce (if you prefer Whole Food diet, add 1 lb diced fresh tomatoes)

1 cup

Coconut Oil

2 Tbsp

Preparation:

  • Step 1: wash and slice the pumpkin in cubes (How to slice pumpkin, see the instruction above)
  • Step 2: wash and rinse canned kidney beans
  • Step 3: dice onions, garlic, bell pepper and chilly (optional fresh tomatoes)
  • Step 4: put 2 tbsp. coconut oil into the saucepan and let it melt
  • Step 5: add diced onions, bell pepper and sauté for 1 minute
  • Step 6: add The Beyond Burger, sauté and stir for 2 minutes. (If you don´t have or don´t like to add this Burger, see step 8)
  • Step 7: add water, marjoram, paprika, cumin, salt and diced fresh garlic and chili, and stir
  • Step 8: add tomato sauce (optional diced tomatoes), kidney beans, pumpkin (if you don´t add The Beyond Burger, add quinoa)
  • Step 9: add Himalayan pink salt and cayenne black pepper
  • Step 10: steam for app. 15 minutes, stirring occasionally
